Colby / Colby Jack
A Wisconsin Original... first produced in the central Wisconsin town of Colby in 1874 as a close relative of Cheddar, but it has a more open texture and higher moisture. This semi-soft cheese is made like Cheddar except the curds are washed in cold water to keep them separate, and to prevent the knitting which gives Colby an elastic texture and milder flavor; it is traditionally formed in a Longhorn shape. Colby-Jack ...a Marbled version of this cheese is a blend of both white and yellow curds formed together.
