Jack / Monterey Jack
Monterey Jack was discovered in Monterey, California by a Scotsman named David Jacks in the 1890s. It is also a washed curd cheese like Colby, but always creamy white with a semi-soft, natural, creamy open texture and delicate, buttery but slightly tart flavor. Wisconsin leads all other states in the production of "Jack" cheese, often produced with unique flavors... spices, herbs, fruits and vegetables. Nasonville also adds a special Blue culture to create our new "Blue Marble Jack." All Jack cheeses are excellent melting and cooking cheeses, but Blue Marble was created as a unique culinary cheese.
