A Wisconsin original! Brick was named for the texture on the cheese created by pushing it on clay-fired bricks. This cousin to white American Cheddar has a softer taste and sharper finish. Somewhat sticky to the knife with tiny visible fine holes, Brick is perfect for appetizers and sandwiches and melts extremely well.
