Cheese History

The earliest mention of cheese was 3500-6,000 B.C. Today, one-third of the milk produced in the United States is used for cheese. It is one of the most varied and subtle foods in the world. Cheese making is a complex blend of artistry, science and tradition. Generally, each kind of cheese has its own unique blend of the following:

  1. Type of milk: (cow, goat, sheep, buffalo, camel, reindeer, yak, etc.)
  2. Methods: Cutting, curding, cooking, forming
  3. Bacteria or mold used for ripening
  4. Salt or seasonings added
  5. Conditions: ripening or curing temperature, humidity and time
